Hoisin [hoy-sin]

This sweet Chinese sauce is both a condiment and glaze for pork and poultry. Made by combining fermented soya beans, garlic, sugar and chilli, it’s probably best known as the sauce that gives shredded duck pancakes their lovely sweetness.
